Carrot Cake

Ingredients

Cake

2 cups all purpose flour

1/2 cup almond flour

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/4 tsp nutmeg

1/4 tsp all spice

3/4 cup avocado oil

1 1/4 granulated sugar

1/2 cup brown sugar

4 large eggs

1 cup crushed pineapple or applesauce

3 cups shredded carrots

Cream Cheese Frosting

1/2 cup unsalted butter

8 oz cream cheese

1 tsp vanilla extract

1/4 tsp salt

4 cups powdered sugar

Directions

1. Preheat oven to 350F.

2. Whisk together flours, baking powder, baking soda, salt and spices. Set aside

3. In a separate bowl whisk together the oil, sugars, and eggs until the batter begins to lighten in color.

4. Stir in the dry ingredients to the wet ingredients.

5. Add the pineapple and carrots, fold until combined.

6. Evenly divide batter into two 8-inch cake pans.

7. Bake for 30-40 minutes.

8. Allow cakes to cool for about 20 minutes before removing from pans and cool completely before frosting.

9. Prepare frosting by combining butter and cream cheese with an electric mixer, beat until creamy and lump free.

10. Add vanilla and salt, stir to combine.

11. With mixer on low, gradually add powdered sugar until combined.

12. Frost that cake! Enjoy!
