Pumpkin Cake
Ingredients

1/2 cup melted coconut oil
2/3 cup brown sugar
1 Tbsp vanilla extract
2 large eggs
1 (15oz) can of pumpkin puree
1 1/2 cups all purpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp ground nutmeg
3/4 tsp salt
Cinnamon Cream Cheese Frosting
1/2 cup unsalted butter
2 ounces cream cheese
3 1/2 cups powdered sugar
1 Tbsp cinnamon
1/4 tsp salt
1 Tbsp vanilla extract
Directions
1. Preheat oven to 350F.
2. Line an 8-inch square baking pan with parchment paper.
3. Beat together the oil, sugar, vanilla, eggs, and pumpkin.
4. Add flour, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, and salt, mix until smooth.
5. Pour batter into prepared pan.
6. Bake for 25-30 minutes.
7. Use parchment paper overhang to remove cake from pan and place on a cooling rack.
8. Let cool for about 30 minutes.
9. Meanwhile, beat together the butter and cream cheese. Add powdered sugar, cinnamon, salt, and vanilla, beat until creamy.
10. Spread frosting over cake, slice and enjoy!
