Ham and Potato Soup

Ingredients

1 medium onion, diced

3 Tbsp butter

3 medium size potatoes, diced

3 cups chicken broth

2 cups ham, diced

2 cups carrots, chopped

1 cup celery, sliced

2 cloves garlic, minced

1/4 cup fresh parsley

1/2 tsp dried thyme

1/2 tsp salt

1/2 tsp pepper

1 cup half and half

1/2 cup sour cream

1 Tbsp corn starch

1 Tbsp water

Directions

1. In a large pot, melt butter over medium heat.

2. Add diced onion and cook until tender, about 5 minutes. .

3. Add the potatoes, chicken broth, ham, carrot, celery, garlic, parsley, thyme, and pepper. Stir to combine.

4. Increase heat to medium-high and bring soup to a boil.

5. Reduce to a simmer and cook for 20 minutes or until potatoes are tender.

6. Add half and half and simmer for an additional 5 minutes.

7. Combine cornstarch with water, stir into the soup, simmer for 2 minutes.

8. Remove from heat and stir in greek yogurt.

9. Garnish with fresh parsley and enjoy!
