Gyro Bounty Bowl
Ingredients
2 cups romain lettuce
2 oz gyro meat, warmed
1/2 cup russet potato, roasted
1/2 cup tomato, diced
1/2 cup cucumber, diced
1/2 cup garbanzo beans, roasted
1/4 cup red onion, diced
feta cheese
tzatziki sauce
Directions
1. Assemble bowl starting with lettuce then add remaining ingredients, alternating between colors for visual appeal.
2. Top with feta cheese & tzatziki sauce.
3. Serve and enjoy! :)
Tzatziki Sauce
1 cup Greek yogurt
1 clove of garlic, finely minced
1 tbsp fresh lemon juice
1 tbsp pickle juice
1 tbsp olive oil
2 tbsp fresh dill, chopped
1/2 tsp salt
1/4 tsp pepper
salt and pepper to taste
Mix ingredients in a small bowl, then chill in refrigerator for at least 30 minutes to let flavors meld.
