Berry Oat Bars
Ingredients
Oat Mixture
250 grams rolled oats
150 grams maple syrup
1 tsp cinnamon
130 grams almond butter
pinch of salt
Berry Jam
300 grams frozen mixed berries
2 tbsp chia seeds
1 tbsp maple syrup
Ingredients
1. Add berries, chia and maple syrup into a sauce pan and simmer for five minutes until all the juices are released and mixture starts to thicken.
2. Remove from heat and allow to cool while preparing the oats.
3. Pulse rolled oats in a high speed blender until lightly broken up.
4. Mix together oats, maple syrup, cinnamon, almond butter and salt.
5. Line a bread pan with parchment paper and add half the oat mixture, using the back of a spoon to press and flatten.
6. Add berry jam and smooth into an even layer.
7. Add remaining oats to cover jam and press down firmly again with the back of a spoon.
8. Bake at 350F for 25 minutes.
9. Remove from oven and allow to cool slightly before slicing.
