Chocolate Chunk Banana Muffins
Ingredients
6 Tbsp unsalted butter, melted
1/2 cup brown sugar, packed
1 egg
1 tsp vanilla
3 ripe bananas, mashed
1 cup all purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup milk chocolate chunks
Directions
1. Preheat oven to 425 F and line a 12 cup muffin tin with paper liners.
2. In a large bowl, whisk together the sugar, butter, egg, and vanilla.
3. Mix in mashed bananas.
4. Add flour, cocoa powder, baking soda, baking powder, cinnamon, and salt, and stir to combine.
5. Gently stir in 3/4 cup of the chocolate chunks.
6. Scoop evenly into prepared muffin tin.
7. Top with remaining chocolate chunks.
8. Bake for 5 minutes at 425 F then lower heat to 350 F and bake for an additional 12 minutes.
9. Let cool. Remove from pan and enjoy!
