Candied Pecan Salad
Ingredients
Candied Pecans
2 Tbsp maple syrup
1 Tbsp coconut oil, melted
1/4 tsp salt
1/8 tsp cinnamon
2 cups raw pecans
Dressing
2 Tbsp honey
1 Tbsp dijon mustard
1/2 tsp salt
1/2 tsp pepper
1 large garlic clove, minced
1/4 cup balmasic vinegar
3/4 cup avocado oil
Salad
8 oz bag of spinach
1/4 cup dried gogi berries
1/2 cup candied pecans
balsamic dressing
Directions
1. Prepare candied pecans by melting coconut oil on a medium sized frying pan, then add syrup, salt, cinnamon and pecans and toss to coat.
2. Cook on medium heat, stirring frequently, until pecans are toasted. (about 6 minutes) Let cool.
3. While pecans are cooling, prepare dressing by wisking together honey, mustard, salt, pepper, garlic and vinegar in a small bowl.
4. Pour vinegar mixture into a small mason jar, add oil and shake to combine.
5. Assemble spinach, gogi berries and 1/2 cup of pecans into salad bowl of choice and top with balsamic dressing. Enjoy!
